Founder Ed Eglitis
Owner Ed Eglitis is a leader in the food industry and local farmers market scene. He developed The Bagel Table concept following a successful pop-up in Chestnut Hill in 2015. Thanks to overwhelming community support, the team has since opened five permanent locations around Greater Boston.
Why did you apply for Project Pop-Up?
Pop-ups are the origin of The Bagel Table's success. We first launched our pop-up bagel shop at The Street in Chestnut Hill back in 2015. That pop-up was the proof of concept we needed to begin opening permanent storefronts and we have embraced each opportunity to pop up since. Project: Pop-Up offers a chance to test out a new neighborhood while experimenting with our menu, forging new collaborations and continuing to make friends and delicious food in the process.
